A perfect low-carb alternative to pasta! You can eat this dish cooked or raw. To eat cooked, simply heat the courgette and pesto in a wok pan. This is my go to Friday night supper because it’s super easy to make after a long week and goes very well with a glass of red vino :0)

And this is my kind of real fast food: a smoked trout salad, which is especially perfect for summer. Different versions of this salad are a staple in Finland during summer because it is so easy and quick, not to mention healthy, and you can make it more or less wholesome (by way of adding potatoes, for example) according to your wish. Tasty it is as well, of course ;-)

Skin Beauty Salad

This beauty salad combines many of those ingredients vital for good skin health. Tahini dressing coats the chickpeas and the baby spinach leaves, and grilled zucchini and diced avocado bring extra creaminess to the dish. I also added some soaked almonds for an extra layer of texture. Delicious!
