Lemony fish with sauteed kale and roasted heirloom carrots

The carrots are so sweet and delicious glaced with caramelised balsamic and roasted, and the kale gets more flavour from sautéing it with shallots. So simple, but definitely makes this humble dish a bit more exciting!

Beef & Potato Korokke – Japanese style croquettes

With the beef mince and some potatoes in my fridge my usual choice for dinner would have been meatballs, but since I have been even more than my usual Japan crazy lately (as we are about to book our flights to Japan!!), I decided to make the ever so yummy korokke.

I just love these Japanese words that have been borrowed from other languages, and the way they are pronounced feels very natural to me thanks to Finnish and Japanese having a lot of similar sounds. Korokke of course comes from the word croquette, and these deep fried patties are usually made with mashed potato. This version has a slight curry flavour to it and I added a good amount of beef to make it a fuller meal.

Honey Roast Chicken with Quinoa Stuffing or Salad

I got the idea for this recipe from the latest Fresh magazine, but instead of using couscous (which I don't find particularly mind blowing), I used black quinoa which I've been experimenting a fair bit lately.

Amaranth and quinoa stuffed capsicums

I've tweaked the original recipe a bit, but love the idea of using the two super grains - amaranth and quinoa, instead the traditional couscous or rice you normally find with this recipe. I also love edamame and have a big bag in the freezer at all times. I was so happy with the outcome and I think this is a lovely "meatless Monday" recipe idea.

Falafel with Roasted Eggplant & Tomato Salad

The roasted eggplant and tomato salad is such a nice addition as I wanted to make something a bit more wholesome to go with the falafels. I actually really like sumac, and if you haven't yet tried this spice, I urge you to give it ago!

Long melon and almond soup with lemon and mint

What I was really feeling like was a refreshing, healthy and good-doing soup, so I came up with this lemony and minty version which, quite frankly, was exactly what I was hoping for.

Creamy roasted chestnut and quinoa soup

Quinoa flakes make this soup so smooth and thick and I've used home-made rice milk since I'm cutting down on dairy at the moment. I will share the method and my recipe for making your own rice milk in the next post.

Skin Beauty Salad

This beauty salad combines many of those ingredients vital for good skin health. Tahini dressing coats the chickpeas and the baby spinach leaves, and grilled zucchini and diced avocado bring extra creaminess to the dish. I also added some soaked almonds for an extra layer of texture. Delicious!
