  • 1 cup Apricot preserves
  • 2 tablespoon Soy sauce low sodium
  • 1 tablespoon Dijon mustard
  • 1 clove Garlic minced
  • 1 teaspoon Ginger grated
  • to taste Salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together the apricot preserves, soy sauce, Dijon mustard, minced garlic, and grated ginger.
  3. Season the chicken breasts with salt and pepper, then place them in a baking dish.
  4. Pour the apricot mixture over the chicken, making sure each piece is well coated.
  5. Bake in the preheated oven for 45 minutes, or until the chicken is cooked through and the glaze is bubbly.
