Ingredients 

Main Ingredients

  • 2 cups Black Beans cooked or canned
  • 1 cup Carrots diced
  • 1 cup Celery diced
  • 1 cup Onion diced
  • 3 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black Pepper or to taste
  • 1 tablespoon Olive Oil

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Add garlic and cook for another minute.
  4. Add black beans, vegetable broth, cumin, chili powder, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Use an immersion blender to blend the soup to your desired consistency. Serve hot.
