Main Ingredients
- 2 cups Black Beans cooked or canned
- 1 cup Carrots diced
- 1 cup Celery diced
- 1 cup Onion diced
- 3 cloves Garlic minced
- 4 cups Vegetable Broth
- 1 teaspoon Cumin
- 1 teaspoon Chili Powder
- 1 teaspoon Salt or to taste
- ½ teaspoon Black Pepper or to taste
- 1 tablespoon Olive Oil
Heat olive oil in a large pot over medium heat.
Add onions, carrots, and celery. Cook until softened, about 5-7 minutes.
Add garlic and cook for another minute.
Add black beans, vegetable broth, cumin, chili powder, salt, and pepper. Bring to a boil.
Reduce heat and simmer for 20 minutes.
Use an immersion blender to blend the soup to your desired consistency. Serve hot.
