- 3 lbs Corned Beef Brisket
- 4 cups Water
- 1 tablespoon Pickling Spice
- 3 large Carrots peeled and cut into chunks
- 1 large Onion cut into wedges
- 4 cups Cabbage cut into wedges
Preheat your oven to 350°F (175°C).
Place the corned beef brisket in a roasting pan. Add water and sprinkle the pickling spice over the top.
Cover the pan with a lid or aluminum foil and bake for 2 hours.
Add the carrots and onion to the pan. Cover and continue baking for another hour.
Add the cabbage wedges to the pan. Cover and bake for an additional hour, or until the meat and vegetables are tender.
Remove the corned beef from the oven and let it rest for 10 minutes before slicing. Serve with the cooked vegetables.
