Curried Veggie Soup
A hearty and flavorful soup packed with veggies and a hint of curry.

Main Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 3 cups vegetable broth
- 2 cups diced tomatoes
- 2 cups chopped carrots
- 2 cups chopped potatoes
- 1 cup coconut milk
- to taste salt and pepper
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and garlic, and sauté until softened.
Stir in the curry powder and cook for another minute.
Add the vegetable broth, diced tomatoes, carrots, and potatoes. Bring to a boil.
Reduce heat and simmer for about 20 minutes, or until the vegetables are tender.
Stir in the coconut milk and season with salt and pepper to taste. Simmer for another 5 minutes.
Serve hot and enjoy!
