- 1 cup water
- ½ cup butter
- 1 cup all-purpose flour
- 4 eggs
Filling
- 2 cups milk
- ½ cup sugar
- ¼ cup cornstarch
- 4 egg yolks
- 2 tablespoon butter
- 1 teaspoon vanilla extract
Topping
- 1 cup chocolate chips
- ½ cup heavy cream
Preheat oven to 400°F (200°C).
In a saucepan, bring water and butter to a boil. Add flour and stir until mixture forms a ball.
Remove from heat and beat in eggs one at a time. Pipe onto baking sheet.
Bake for 25 minutes or until golden brown. Let cool.
For filling, heat milk and sugar. Mix cornstarch and egg yolks, then add to milk mixture. Cook until thickened. Stir in butter and vanilla.
For topping, heat cream and pour over chocolate chips. Stir until smooth.
Fill eclairs with filling and dip tops in chocolate.
