Garden Veggie Zucchini Soup
A light and healthy soup made with fresh garden vegetables and zucchini.

Main Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 zucchini, chopped
- 2 carrots, chopped
- 4 cups vegetable broth
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup spinach
Heat olive oil in a large pot over medium heat.
Add chopped onion and garlic, sauté until softened.
Add chopped zucchini and carrots, cook for 5 minutes.
Pour in vegetable broth, bring to a boil, then simmer for 20 minutes.
Season with salt and black pepper.
Blend the soup until smooth.
Stir in spinach and cook until wilted.
