Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup mashed ripe bananas about 2-3 bananas
  • ½ cup vegetable oil
  • 2 large eggs beaten
  • 1 teaspoon vanilla extract
  • ½ cup crushed pineapple drained
  • ½ cup chopped nuts walnuts or macadamia nuts

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. In a large mixing bowl, combine the flour, sugar, baking soda, and salt.
  3. In another bowl, mix together the mashed bananas, vegetable oil, beaten eggs, and vanilla extract.
  4. Stir the banana mixture into the flour mixture until just combined. Do not overmix.
  5. Fold in the crushed pineapple and chopped nuts.
  6. Pour the batter into the prepared loaf pan.
  7. Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
