Hawaij Vegetable Soup
A flavorful and warming vegetable soup spiced with Hawaij, a traditional Yemeni spice blend.

Main Ingredients
- 2 tablespoon Olive Oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 2 Carrots, chopped
- 2 Celery stalks, chopped
- 1 cup Diced tomatoes
- 4 cups Vegetable broth
- 1 teaspoon Hawaij spice blend
- 1 Zucchini, chopped
- 1 cup Green beans, chopped
- to taste Salt and pepper
- 1 tablespoon Lemon juice optional
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent.
Add minced garlic, chopped carrots, and celery. Cook for about 5 minutes.
Add diced tomatoes, vegetable broth, and Hawaij spice blend. Bring to a boil.
Reduce heat and simmer for 15 minutes.
Add chopped zucchini and green beans. Cook for another 10 minutes.
Season with salt and pepper to taste. Add lemon juice if using.
Serve hot.
