Fish and Marinade
- 4 fillets White fish (like tilapia or cod)
- 2 tablespoon Olive oil
- 1 teaspoon Chili powder
- 1 teaspoon Cumin
- 1 teaspoon Garlic powder
- 1 teaspoon Salt
Mango Salsa
- 1 cup Diced mango
- ½ cup Diced red onion
- 1 cup Diced red bell pepper
- ¼ cup Chopped fresh cilantro
- 1 tablespoon Lime juice
- 1 teaspoon Salt
Tacos
- 8 small Corn tortillas
- 1 cup Shredded cabbage
1. Marinate the fish: In a bowl, mix olive oil, chili powder, cumin, garlic powder, and salt. Coat the fish fillets in the mixture and let sit for 15 minutes.
2. Prepare the mango salsa: In a mixing bowl, combine diced mango, red onion, red bell pepper, cilantro, lime juice, and salt. Mix well and set aside.
3. Cook the fish: Heat a grill pan over medium-high heat. Grill the fish for about 3-4 minutes on each side until cooked through.
4. Assemble the tacos: Warm the corn tortillas in a pan or microwave. Place a piece of fish on each tortilla, top with shredded cabbage and mango salsa.
