Instant Pot Freekeh Vegetable Soup Recipe
Hearty and healthy vegetable soup made with freekeh, cooked quickly in an Instant Pot.

Main Ingredients
- 1 cup freekeh
- 4 cups vegetable broth
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 cups spinach, chopped
1. Set the Instant Pot to sauté mode. Add a bit of oil and sauté the onion, carrots, celery, and garlic until softened.
2. Add the freekeh, vegetable broth, thyme, oregano, salt, and pepper. Stir well.
3. Close the lid and set the Instant Pot to manual high pressure for 10 minutes.
4. Once the cooking time is up, let the pressure release naturally for 10 minutes, then quick release any remaining pressure.
5. Open the lid, stir in the chopped spinach, and let it wilt for a couple of minutes.
6. Serve hot and enjoy!
