Instant Pot Vegan Split Pea Soup Recipe

Main Ingredients
- 2 cups split peas rinsed and sorted
- 1 large onion chopped
- 2 cloves garlic minced
- 3 medium carrots chopped
- 2 stalks celery chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 6 cups vegetable broth
- to taste salt and pepper
1. Set the Instant Pot to sauté mode. Add a splash of vegetable broth and sauté the onion and garlic until softened, about 3-4 minutes.
2. Add the carrots, celery, split peas, thyme, oregano, smoked paprika, and remaining vegetable broth. Stir to combine.
3. Close the lid and set the Instant Pot to manual high pressure for 15 minutes.
4. Once the cooking time is up, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
5. Open the lid, stir the soup, and season with salt and pepper to taste. Serve hot.
