Ingredients 

Main Ingredients

  • 1 kg lamb shoulder, cut into chunks
  • 2 onions, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground turmeric
  • 1 cup chicken broth
  • 1 cup dried apricots, halved
  • 1 cup pitted green olives
  • 2 tablespoon honey
  • 2 tablespoon olive oil
  • to taste salt and pepper
  • 1 bunch fresh cilantro, chopped for garnish

Instructions 

  1. 1. Heat olive oil in a tagine or heavy-bottomed pot over medium heat.
  2. 2. Add the chopped onions and garlic, sauté until softened.
  3. 3. Add the lamb chunks and brown on all sides.
  4. 4. Stir in the ground ginger, cumin, cinnamon, and turmeric. Cook for another minute.
  5. 5. Pour in the chicken broth, bring to a boil, then reduce heat to low and cover. Simmer for 1.5 hours.
  6. 6. Add the dried apricots, green olives, and honey. Continue to simmer for another 30 minutes.
  7. 7. Season with salt and pepper to taste.
  8. 8. Garnish with fresh cilantro before serving.
