Ingredients 

Scones

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 lemon zest from one lemon
  • ½ cup unsalted butter cold, cut into cubes
  • 1 cup blueberries fresh or frozen
  • ½ cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together flour, sugar, baking powder, salt, and lemon zest.
  3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Gently fold in the blueberries.
  5. In a separate bowl, whisk together the heavy cream, egg, and vanilla extract.
  6. Pour the wet ingredients into the dry ingredients and stir until just combined.
  7. Turn the dough out onto a floured surface and shape into a circle about 1-inch thick. Cut into 8 wedges and place on the prepared baking sheet.
  8. Bake for 20-25 minutes, or until golden brown. Let cool on a wire rack.
