Ingredients

  • 4 cups Diced potatoes
  • 6 slices Bacon cooked and crumbled
  • 4 Eggs
  • 1 cup Shredded cheddar cheese
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. 1. Heat olive oil in a large skillet over medium heat.
  2. 2. Add diced potatoes, salt, and pepper. Cook until potatoes are golden and tender, about 15 minutes.
  3. 3. Create four wells in the potatoes and crack an egg into each well.
  4. 4. Cover the skillet and cook until eggs are set, about 5 minutes.
  5. 5. Sprinkle with crumbled bacon and shredded cheese. Cover until cheese is melted.
  6. 6. Serve hot and enjoy!
