Louisiana Crawfish Etouffee

- 1 cup Butter
- 1 cup All-purpose flour
- 1 cup Chopped onions
- 1 cup Chopped bell peppers
- 1 cup Chopped celery
- 2 cloves Garlic, minced
- 2 cups Chicken stock
- 1 lb Crawfish tails
- 1 teaspoon Cajun seasoning
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 1 cup Chopped green onions
- 1 cup Chopped parsley
- 4 cups Cooked white rice
Melt butter in a large skillet over medium heat.
Add flour to make a roux, stirring constantly until it turns a light brown color.
Add onions, bell peppers, and celery. Cook until soft.
Add garlic and cook for another minute.
Slowly add chicken stock, stirring constantly to avoid lumps.
Add crawfish tails, Cajun seasoning, salt, and black pepper. Simmer for 20 minutes.
Stir in green onions and parsley. Cook for another 5 minutes.
Serve over cooked white rice.
