  • 1 tablespoon butter
  • 1 jalapeño, diced
  • ¼ cup onion, chopped
  • ¼ cup tomato, chopped
  • ¼ cup cilantro, chopped

Instructions 

  1. 1. Heat the butter in a skillet over medium heat.
  2. 2. Add the diced jalapeño and chopped onion. Sauté until softened.
  3. 3. Add the chopped tomato and cook for another minute.
  4. 4. Beat the eggs in a bowl and pour into the skillet. Stir continuously.
  5. 5. Once the eggs are nearly set, add the chopped cilantro. Season with salt and pepper to taste.
  6. 6. Serve hot with your favorite sides.
