Ingredients

  • 2 cups Carrots, chopped
  • 2 cups Butternut squash, chopped
  • 1 cup Sweet potatoes, chopped
  • 1 cup Onion, chopped
  • 4 cups Vegetable broth
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions 

  1. 1. In a large pot, heat some oil over medium heat.
  2. 2. Add the chopped onions and cook until translucent.
  3. 3. Add the carrots, butternut squash, and sweet potatoes. Cook for a few minutes.
  4. 4. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 20 minutes, or until the vegetables are tender.
  5. 5. Use a blender to puree the soup until smooth.
  6. 6. Season with salt and black pepper to taste. Serve hot.
