Parsnip Vegetable Soup

Main Ingredients
- 4 cups parsnips, peeled and chopped
- 1 cup carrots, peeled and chopped
- 1 cup celery, chopped
- 1 large onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 tablespoon olive oil
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and garlic, and sauté until softened.
3. Add the parsnips, carrots, and celery. Cook for about 5 minutes.
4. Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes.
5. Use a blender to puree the soup until smooth.
6. Season with salt and pepper to taste. Serve hot.
