Ingredients 

Main Ingredients

  • 4 cups parsnips, peeled and chopped
  • 1 cup carrots, peeled and chopped
  • 1 cup celery, chopped
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoon olive oil

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the onion and garlic, and sauté until softened.
  3. 3. Add the parsnips, carrots, and celery. Cook for about 5 minutes.
  4. 4. Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes.
  5. 5. Use a blender to puree the soup until smooth.
  6. 6. Season with salt and pepper to taste. Serve hot.
