Ingredients 

Main Ingredients

  • 1 cup Quinoa rinsed
  • 2 cups Water
  • 1 tablespoon Olive Oil
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 1 can Black Beans drained and rinsed
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 1 cup Corn frozen or fresh
  • 1 Lime juiced
  • ¼ cup Cilantro chopped
  • to taste Salt and Pepper

Instructions 

  1. 1. In a saucepan, bring quinoa and water to a boil. Reduce heat, cover, and simmer for 15 minutes.
  2. 2. In a frying pan, heat olive oil over medium heat. Sauté onion and garlic until softened.
  3. 3. Stir in black beans, cumin, coriander, and corn. Cook until heated through.
  4. 4. Combine cooked quinoa with the bean mixture. Add lime juice and cilantro. Season with salt and pepper.
