Ingredients 

Main Ingredients

  • 1 cup quinoa
  • 2 cups chicken broth
  • 1 lb chicken breast cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cherry tomatoes halved
  • 1 cup spinach fresh

Instructions 

  1. Rinse quinoa under cold water.
  2. In a saucepan, bring chicken broth to a boil. Add quinoa, reduce heat, and simmer for 15 minutes.
  3. In a skillet, heat olive oil over medium heat. Add chicken and cook until browned.
  4. Season chicken with garlic powder, paprika, salt, and black pepper.
  5. Add cherry tomatoes and spinach to the skillet. Cook until spinach is wilted.
  6. Combine cooked quinoa with the chicken and vegetables. Serve warm.
