Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 cup bell peppers chopped
  • 1 cup zucchini chopped
  • 1 cup cherry tomatoes halved
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes.
  3. 3. In a separate pan, heat the olive oil over medium heat. Add the chopped bell peppers, zucchini, and cherry tomatoes. Cook for 5-7 minutes until tender.
  4. 4. Fluff the cooked quinoa with a fork and mix it with the sautéed vegetables. Season with salt and black pepper to taste.
