Ingredients 

Main Ingredients

  • 1 cup Red Lentils
  • 1 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, grated
  • 1 tablespoon Curry Powder
  • 1 teaspoon Turmeric
  • 1 can Coconut Milk
  • 2 cups Vegetable Broth
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 1 handful Cilantro, chopped for garnish

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic and grated ginger, cook for another minute.
  4. Stir in the curry powder and turmeric, cook for 30 seconds.
  5. Add the red lentils, coconut milk, and vegetable broth. Bring to a boil.
  6. Reduce heat and simmer for 20-25 minutes, until lentils are tender.
  7. Season with salt and black pepper to taste.
  8. Garnish with chopped cilantro before serving.
