Ingredients 

Main Ingredients

  • 1 lb Chicken Breast boneless, skinless
  • 1 can Black Beans drained and rinsed
  • 1 can Corn drained
  • 1 can Diced Tomatoes with green chilies
  • 4 cups Chicken Broth
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 tablespoon Olive Oil

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic. Cook until softened, about 5 minutes.
  3. Add the chicken breast and cook until browned on all sides.
  4. Pour in the chicken broth, diced tomatoes, black beans, and corn.
  5. Stir in the cumin, chili powder, salt, and black pepper.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Remove the chicken breast, shred it, and return it to the pot. Simmer for another 5 minutes.
  8. Serve hot, garnished with fresh cilantro and a squeeze of lime if desired.
