- 1 cup corn kernels fresh or frozen
- 1 cup black beans rinsed and drained
- 1 cup shredded cheese cheddar or Mexican blend
- ½ cup diced bell pepper
- ¼ cup chopped cilantro
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- 8 pieces egg roll wrappers
- 2 cups vegetable oil for frying
1. In a large mixing bowl, combine corn, black beans, shredded cheese, bell pepper, cilantro, cumin, chili powder, and salt.
2. Lay out an egg roll wrapper on a clean surface. Place about 2 tablespoons of the mixture in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll up tightly. Seal the edges with a bit of water.
3. Heat the vegetable oil in a frying pan over medium-high heat. Fry the egg rolls in batches until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels.
4. Serve hot with your favorite dipping sauce.
