Ingredients

  • 2 tablespoon olive oil
  • 6 cloves garlic minced
  • 1 large onion chopped
  • 2 medium carrots sliced
  • 2 stalks celery sliced
  • 1 large zucchini diced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the minced garlic and chopped onion. Sauté until the onion is translucent.
  3. Add the sliced carrots and celery. Cook for about 5 minutes, stirring occasionally.
  4. Add the diced zucchini and cook for another 5 minutes.
  5. Stir in the diced tomatoes, vegetable broth, paprika, salt, and black pepper.
  6. Bring the soup to a boil, then reduce the heat and let it simmer for about 20 minutes.
  7. Serve hot and enjoy!
