Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 cup frozen peas
  • 1 tomato chopped
  • to taste salt and pepper
  • 1 tablespoon fresh parsley chopped

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  3. 3. Add the red bell pepper, paprika, and cumin. Cook for another 2-3 minutes.
  4. 4. Add the quinoa and vegetable broth. Bring to a boil, then reduce the heat and simmer for about 15 minutes, or until the quinoa is cooked.
  5. 5. Stir in the frozen peas and chopped tomato. Cook for another 5 minutes.
  6. 6. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
