Ingredients 

Main Ingredients

  • 1 tablespoon Vegetable oil
  • 2 cloves Garlic, minced
  • 1 Onion, chopped
  • 1 Red bell pepper, chopped
  • 1 cup Carrots, sliced
  • 1 cup Broccoli florets
  • 4 cups Vegetable broth
  • 1 can Coconut milk
  • 2 tablespoon Red curry paste
  • 1 tablespoon Soy sauce
  • 1 tablespoon Lime juice
  • 1 cup Snow peas
  • 1 cup Mushrooms, sliced
  • 1 cup Baby spinach
  • 1 handful Fresh cilantro, chopped

Instructions 

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the garlic and onion, and sauté until fragrant.
  3. Add the red bell pepper, carrots, and broccoli. Cook for about 5 minutes.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. Stir in the coconut milk, red curry paste, soy sauce, and lime juice. Simmer for another 10 minutes.
  6. Add the snow peas, mushrooms, and baby spinach. Cook for an additional 5 minutes.
  7. Garnish with fresh cilantro before serving.
