Main Ingredients
- 1 tablespoon Olive Oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 Red Bell Pepper, chopped
- 1 Green Bell Pepper, chopped
- 1 cup Corn Kernels
- 1 can Black Beans, drained and rinsed
- 1 can Kidney Beans, drained and rinsed
- 1 can Diced Tomatoes
- 2 tablespoon Chili Powder
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 2 cups Vegetable Broth
Heat olive oil in a large pot over medium heat.
Add chopped onion and minced garlic. Sauté until softened.
Add chopped bell peppers and corn. Cook for another 5 minutes.
Add black beans, kidney beans, diced tomatoes, chili powder, cumin, paprika, salt, and black pepper. Stir well.
Pour in vegetable broth and bring to a boil. Reduce heat and let simmer for 30 minutes.
Serve hot and enjoy!
