Spinach and Vegetable Soup

Main Ingredients
- 1 tablespoon Olive oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 2 Carrots, sliced
- 2 Celery stalks, sliced
- 4 cups Vegetable broth
- 4 cups Fresh spinach, chopped
- 1 teaspoon Salt
- 0.5 teaspoon Black pepper
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic, sliced carrots, and celery. Cook for another 5 minutes.
Pour in the vegetable broth and bring to a boil.
Reduce heat and let it simmer for 15 minutes.
Add chopped spinach, salt, and black pepper. Cook for another 5 minutes.
Serve hot.
