Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 Carrots, sliced
  • 2 Celery stalks, sliced
  • 4 cups Vegetable broth
  • 4 cups Fresh spinach, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic, sliced carrots, and celery. Cook for another 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and let it simmer for 15 minutes.
  6. Add chopped spinach, salt, and black pepper. Cook for another 5 minutes.
  7. Serve hot.
