Spinach Rolls with Puff Pastry

- 1 package Puff Pastry thawed
- 2 cups Spinach chopped
- 1 cup Ricotta Cheese
- 1 Egg beaten
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine chopped spinach, ricotta cheese, salt, and pepper.
Roll out the puff pastry on a lightly floured surface. Cut into squares.
Place a spoonful of the spinach mixture in the center of each square. Fold the corners over to seal.
Brush the tops with beaten egg.
Bake for 15-20 minutes or until golden brown.
