Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 can black beans, drained and rinsed
  • 1 can white beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • to taste salt and pepper
  • 1 bay leaf

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic, chopped carrot, and celery. Cook for another 5 minutes.
  4. Add the black beans, white beans, vegetable broth, ground cumin, smoked paprika, salt, pepper, and bay leaf. Stir to combine.
  5. Bring the soup to a boil, then reduce the heat and let it simmer for about 20 minutes.
  6. Remove the bay leaf before serving. Enjoy your vegan black and white bean soup!
