Vegan Black-Eyed Pea Soup

Main Ingredients
- 1 cup Dried black-eyed peas soaked overnight
- 1 tablespoon Olive oil
- 1 Onion chopped
- 2 cloves Garlic minced
- 2 cups Vegetable broth
- 1 cup Diced tomatoes canned
- 1 teaspoon Smoked paprika
- 1 teaspoon Dried thyme
- 1 teaspoon Salt to taste
- ½ teaspoon Black pepper to taste
- 2 cups Kale chopped
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and cook until translucent, about 5 minutes.
3. Stir in minced garlic and cook for another minute.
4. Add soaked black-eyed peas, vegetable broth, diced tomatoes, smoked paprika, dried thyme, salt, and black pepper. Bring to a boil.
5. Reduce heat to low, cover, and simmer for 30-35 minutes or until black-eyed peas are tender.
6. Stir in chopped kale and cook for an additional 5 minutes.
7. Adjust seasoning with salt and pepper to taste. Serve hot.
