Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 6 cups carrots, chopped
  • 4 cups vegetable broth
  • 1 can coconut milk
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, garlic, and ginger. Sauté until onion is translucent.
  3. Stir in curry powder, ground cumin, and ground coriander. Cook for another minute.
  4. Add chopped carrots and vegetable broth. Bring to a boil, then reduce heat and simmer until carrots are tender, about 20 minutes.
  5. Remove from heat and let cool slightly. Use a blender to puree the soup until smooth.
  6. Return the soup to the pot, stir in coconut milk, and heat through. Season with salt and pepper to taste.
