Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 large Onion, diced
  • 2 cloves Garlic, minced
  • 4 cups Corn kernels (fresh or frozen)
  • 3 cups Vegetable broth
  • 1 cup Coconut milk
  • 2 medium Potatoes, diced
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 tablespoon Nutritional yeast (optional)

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the diced onion and minced garlic, and sauté until the onion is translucent.
  3. 3. Add the corn kernels, diced potatoes, vegetable broth, and coconut milk. Bring to a boil.
  4. 4. Reduce heat and simmer for about 20 minutes, or until the potatoes are tender.
  5. 5. Use a blender to puree about half of the soup, then return it to the pot. This will make the chowder creamy while still leaving some texture.
  6. 6. Season with salt, black pepper, and nutritional yeast if using. Stir well.
  7. 7. Serve hot and enjoy!
