Vegan Cream of Asparagus Soup

Main Ingredients
- 1 lb Asparagus trimmed and cut into 1-inch pieces
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 4 cups Vegetable Broth
- 1 cup Coconut Milk
- to taste Salt and Pepper
1. In a large pot, sauté the onion and garlic until soft.
2. Add the asparagus and vegetable broth. Bring to a boil, then simmer for 15 minutes.
3. Blend the soup until smooth.
4. Stir in the coconut milk. Season with salt and pepper to taste.
