Instructions
In a large bowl, whisk together the flour, sugar, and salt.
Gradually add the almond milk, whisking continuously to avoid lumps.
Stir in the vegetable oil and vanilla extract until the batter is smooth.
Heat a non-stick pan over medium heat. Lightly grease if necessary.
Pour a ladleful of batter into the pan, swirling to spread evenly.
Cook until the edges lift and the bottom is golden brown, about 2-3 minutes. Flip and cook the other side for another 1-2 minutes.
Repeat with the remaining batter. Serve warm with your favorite toppings.
