Main Ingredients
- 2 tablespoon Olive Oil
- 1 large Onion, chopped
- 3 cloves Garlic, minced
- 500 g Mushrooms, sliced
- 4 cups Vegetable Broth
- 1 cup Coconut Milk
- to taste Salt and Pepper
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and minced garlic. Sauté until translucent.
3. Add sliced mushrooms and cook until they release their moisture and become tender.
4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
5. Stir in coconut milk and season with salt and pepper to taste.
6. Use a blender to puree the soup until smooth. Serve hot.
