Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 250 g mushrooms, sliced
  • 1 bunch kale, chopped
  • 1 liter vegetable broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Add sliced mushrooms and cook until they release their moisture and start to brown, about 10 minutes.
  5. Add chopped kale and cook until wilted, about 5 minutes.
  6. Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 10 minutes.
  7. Season with salt and black pepper to taste. Serve hot.
