Main Ingredients
- 2 cups Pumpkin puree
- 1 cup Coconut milk
- 1 cup Vegetable broth
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 1 teaspoon Ground cinnamon
- ½ teaspoon Ground nutmeg
- ½ teaspoon Salt
- ¼ teaspoon Black pepper
1. In a large pot, sauté the chopped onion and minced garlic until soft.
2. Add the pumpkin puree, coconut milk, and vegetable broth. Stir to combine.
3. Add the ground cinnamon, ground nutmeg, salt, and black pepper. Bring to a simmer.
4. Simmer for 20 minutes, stirring occasionally.
5. Use a blender to puree the soup until smooth. Serve hot.
