Ingredients 

Main Ingredients

  • 1 cup Red Lentils
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 large Carrot chopped
  • 1 stalk Celery chopped
  • 1 teaspoon Cumin
  • 1 teaspoon Turmeric
  • 1 teaspoon Paprika
  • 4 cups Vegetable Broth
  • 1 can Diced Tomatoes
  • to taste Salt and Pepper
  • 2 tablespoon Olive Oil

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onions, garlic, carrots, and celery. Sauté until softened.
  3. 3. Stir in cumin, turmeric, and paprika. Cook for another minute.
  4. 4. Add red lentils, vegetable broth, and diced tomatoes. Bring to a boil.
  5. 5. Reduce heat and let it simmer for 25-30 minutes until lentils are tender.
  6. 6. Season with salt and pepper to taste. Serve hot.
