Ingredients 

Main Ingredients

  • 200 g Udon noodles
  • 1 tablespoon Sesame oil
  • 2 cloves Garlic minced
  • 1 tablespoon Ginger minced
  • 4 cups Vegetable broth
  • 2 tablespoon Soy sauce
  • 1 cup Mushrooms sliced
  • 1 cup Baby spinach
  • 2 stalks Green onions chopped
  • 1 tablespoon Miso paste

Instructions 

  1. 1. Cook udon noodles according to package instructions. Drain and set aside.
  2. 2. In a pot, heat sesame oil over medium heat. Add garlic and ginger, sauté for 2-3 minutes.
  3. 3. Add vegetable broth, soy sauce, and mushrooms. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. 4. Stir in baby spinach and green onions. Cook for another 2 minutes.
  5. 5. Dissolve miso paste in a small amount of hot broth, then add to the pot. Stir well.
  6. 6. Add cooked udon noodles to the pot. Serve hot.
