Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 2 cups Mushrooms sliced
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Carrots diced
  • 1 cup Celery diced
  • 6 cups Vegetable broth
  • 1 teaspoon Thyme dried
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black pepper ground

Instructions 

  1. 1. Heat a large pot over medium heat. Add a splash of oil.
  2. 2. Add the chopped onion, garlic, carrots, and celery. Sauté until softened, about 5-7 minutes.
  3. 3. Add the sliced mushrooms and cook for another 5 minutes.
  4. 4. Stir in the lentils, vegetable broth, thyme, salt, and pepper.
  5. 5. Bring to a boil, then reduce the heat and let it simmer for about 30-35 minutes, or until the lentils are tender.
  6. 6. Adjust seasoning if needed. Serve hot.
