Vegetarian Mushroom Lentil Soup
A hearty and nutritious vegetarian soup made with mushrooms and lentils.

Main Ingredients
- 1 cup Lentils rinsed
- 2 cups Mushrooms sliced
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 1 cup Carrots diced
- 1 cup Celery diced
- 6 cups Vegetable broth
- 1 teaspoon Thyme dried
- 1 teaspoon Salt or to taste
- ½ teaspoon Black pepper ground
1. Heat a large pot over medium heat. Add a splash of oil.
2. Add the chopped onion, garlic, carrots, and celery. Sauté until softened, about 5-7 minutes.
3. Add the sliced mushrooms and cook for another 5 minutes.
4. Stir in the lentils, vegetable broth, thyme, salt, and pepper.
5. Bring to a boil, then reduce the heat and let it simmer for about 30-35 minutes, or until the lentils are tender.
6. Adjust seasoning if needed. Serve hot.
