Ingredients 

Main Ingredients

  • 1 cup Quinoa rinsed
  • 2 cups Water
  • 1 tablespoon Olive Oil
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • 1 cup Bell Pepper diced
  • ¼ cup Red Onion finely chopped
  • 1 tablespoon Lemon Juice freshly squeezed
  • ¼ cup Fresh Parsley chopped
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes.
  3. 3. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  4. 4. In a mixing bowl, combine the cooked quinoa, cherry tomatoes, cucumber, bell pepper, red onion, olive oil, lemon juice, and parsley.
  5. 5. Season with salt and black pepper to taste. Toss everything together until well mixed.
  6. 6. Serve immediately or chill in the refrigerator for later.
