Veggie Soup in Mushroom Broth
A hearty and healthy veggie soup in a rich mushroom broth.

Main Ingredients
- 1 tablespoon olive oil
- 1 cup chopped onions
- 2 cloves garlic, minced
- 2 cups sliced mushrooms
- 2 cups chopped carrots
- 2 cups chopped celery
- 4 cups vegetable broth
- 1 cup chopped spinach
- 1 teaspoon salt
- ½ teaspoon black pepper
Heat olive oil in a large pot over medium heat.
Add onions and garlic, sauté until translucent.
Add mushrooms, carrots, and celery. Cook for 5-7 minutes.
Pour in vegetable broth, bring to a boil.
Reduce heat, simmer for 20 minutes.
Add spinach, salt, and pepper. Cook for another 5 minutes.
Serve hot.
