- 4 medium zucchinis spiralized
- 2 tablespoon olive oil
- 3 cloves garlic minced
- 1 cup cherry tomatoes halved
- ¼ cup parmesan cheese grated
- to taste salt and pepper
1. Spiralize the zucchinis and set aside.
2. Heat olive oil in a large skillet over medium heat.
3. Add minced garlic and cook until fragrant, about 1 minute.
4. Add cherry tomatoes and cook until they start to soften, about 3-4 minutes.
5. Add the spiralized zucchini and cook for another 2-3 minutes, until just tender.
6. Season with salt and pepper to taste.
7. Serve immediately, topped with grated parmesan cheese.
